Recipe Tip: Watermelon Granita

- 800 gripe watermelon, without seeds, cut into cubes
- 90 ggranulated sugar
- 1 tablespoonlemon juice
- 1 pinch(es)salt
Step 1Purée all ingredients in a blender until smooth, pour into a suitable metal or enamel mould and freeze.
Step 2After 1 hour remove from the freezer and roughly mix through with a fork. Freeze for a further 2 hours, then scrape through vigorously with the tines of a fork to make icy flakes. Cover with foil and freeze until required. Up to this point, the recipe can be prepared up to 3 days in advance.
Step 3Before serving, scrape again vigorously to obtain even crystals and pour into chilled glasses.
