Recipe Tip: Grilled Trout with Lime & Thyme

- 2 sprig(s)thyme
- 2 tablespoonsherb butter
- 1 pinch(es)sea salt
- 2trout (400g each, gutted and ready to cook)
- 1 pinch(es)freshly ground black pepper
- 1lime (cut into 6 slices)
Step 1Rub the trout inside and out with sea salt and pepper. Spread the herb butter inside the cavity of each trout and place a sprig of thyme and three lime slices inside each fish.
Step 2Cover the trout and leave to rest in the fridge for about an hour.
Step 3Preheat the grill for indirect heat (180°C).
Step 4Place the trout in the grill basket and secure it in place. Grill for about 20 minutes until the fish are cooked and the flesh is flaking (core temperature 58 to 60°C).
