Effortless leek fondue toasts
You can cook the leeks, grate the parmesan and make the toast ahead of time, so this is a last-minute assembly job

Ingredients
- 50g unsalted butter
- 1leek (medium to large, using the white and green parts) finely sliced
- 1skinny baguette
- grated parmesan
Instructions
Step 1
Melt the butter in a small pan and very gently fry the sliced leek for 10 mins until it is meltingly soft. Cool until the butter solidifies.Step 2
Cut six thin slices off the baguette and toast them carefully.Step 3
Spoon a good layer of leeks onto each slice and grate over a thick layer of parmesan.Step 4
Flash under a hot grill to brown the parmesan and serve warm.
