Blood Orange Mocktail Recipe
This beautiful non-alcoholic drink from James Knappett is made with two different pink peppercorn infusions and blood orange juice.
Ingredients
- 4blood oranges
- 5 ⅓oz of cane sugar
- ⅓oz of citric acid
- ⅛oz of malic acid
- 5drops of Ms Better’s Bitters, Miraculous Foamer
- 1 ½oz of pink peppercorns
- ¼oz of coriander seeds
- ¼oz of Sichuan peppercorns
- 1pint of water
- 1 ½oz of cane sugar
- ⅓oz of blood orange zest, from the oranges above
- 1 ½oz of pink peppercorns
- ¼oz of coriander seeds
- ¼oz of Sichuan peppercorns
- ⅔pint of water
Instructions
Step 1
Juice and zest the blood oranges, straining the any solids from the juice | Ingredients: 4 blood orangesStep 2
Mix together 300ml of blood orange juice with the sugar, citric acid and malic acid | Ingredients: 5 1/3 oz of cane sugar , 1/3 oz of citric acid , 1/8 oz of malic acidStep 3
Stir until all the solids have dissolved and store in the fridgeStep 4
For the sous vide infusion, coarsely crush the pink peppercorns and coriander seeds in a mortar | Ingredients: 1 1/2 oz of pink peppercorns , 1/4 oz of coriander seedsStep 5
Pour 400ml of water into the vacuum pack bag along with the crushed pink peppercorns and coriander seeds, Sichuan peppercorns, sugar and blood orange zest | Ingredients: 1/4 oz of Sichuan peppercorns , 1 pint of water , 1 1/2 oz of cane sugar , 1/3 oz of blood orange zest, from the oranges aboveStep 6
Fully vacuum seal and cook in a water bath for 1 hour at 90°CStep 7
Strain all the solids and store in the fridgeStep 8
Chill four coupette glassesStep 9
For the quick infusion, coarsely crush the pink peppercorns and coriander seeds in a mortar | Ingredients: 1 1/2 oz of pink peppercorns , 1/4 oz of coriander seedsStep 10
Add the Sichuan peppercorns, crushed coriander seeds and crushed pink peppercorns into the ISI Cream Syphon with 300ml water | Ingredients: 1/4 oz of Sichuan peppercorns , 2/3 pint of waterStep 11
Charge with one N2O charge and shake for 1 minute, then let it rest for one minute, and add a second N20 Charge and shake for another minuteStep 12
After that, let it rest for one minute and rapidly depressurise the syphonStep 13
Mix 150ml of the pink peppercorn sous vide infusion with 100ml of pink peppercorn quick infusionStep 14
Give it a stir and store in the fridgeStep 15
In a shaker mix together 75ml of pink peppercorn mixer, 30ml of blood orange cordial and 5 drops of Ms. Betters Bitters Miraculous Foamer. Shake with ice and strain into a chilled coupette glass | Ingredients: 5 drops of Ms Better’s Bitters, Miraculous Foamer
