Potato and herb salad
This potato salad uses herbs combined with pickles to make a fragrant and tangy dressing for baby new potatoes.

Ingredients
- 800g of new potatoes
- 1handful of fresh chives, finely chopped
- 1handful of fresh parsley, finely chopped
- 1handful of basil, finely chopped
- 1handful of fresh tarragon, finely chopped
- 1tbsp of capers, rinsed and chopped
- 1tbsp of nigella seeds
- 4cornichons, finely chopped
- 1tbsp of red wine vinegar
- 4tbsp of extra virgin olive oil
- 2shallots, finely chopped
- salt
- freshly ground black pepper
Instructions
Step 1
Cook the potatoes in boiling salted water until just tender, then drainStep 2
Combine all the dressing ingredients and season with salt and pepperStep 3
When the potatoes are cooked, drain and break up a little here and there, then allow them to cool a littleStep 4
Stir through the dressing while the potatoes are still slightly warm and serve the salad at room temperature
