      Preheat the oven to 270°C (top & bottom heat) and prepare the tart bases straight from the fridge.

      Place the 2 tart bases without baking paper on a baking tray.

      Spread with the crème fraîche, leaving a 1cm border around the edges.

      Top the bases with ham and finely chopped leek.

      Bake the tarte flambée on the lowest rack of the oven for 7-9 minutes until crisp.
