Radicchio, Gorgonzola, roasted fig and hot honey piadina
This piadina recipe combines tangy Gorgonzola cheese with roasted figs, honey and radicchio.

Ingredients
- 3figs, quartered
- 1knob ofbutter
- 2tbsp oflemon juice
- 4radicchio leaves, washed and dried
- 2dashes of olive oil
- 100g ofGorgonzola
- 1tbsp ofrunny honey
- 1pinch ofchilli flakes
- saltto season
- freshly ground black pepperto season
- 2Crosta & Mollica Emiliana Piadina
Instructions
Step 1
Preheat the oven to 200°C/gas mark 6Step 2
Place the figs in a baking tray and dot with the butter. Mix the honey and 1 tablespoon of the lemon juice together and pour it over the figs, then transfer to the oven and roast for 15 minutesStep 3
Tear the radicchio leaves into smaller pieces if large, then toss with the final tablespoon of lemon juice and a dash of olive oil. Season with salt and pepperStep 4
Heat a frying pan over a medium heat and add the piadina to the dry pan. Cook for 1 minute, then flip and cook for a minute more. Repeat with the second piadinaStep 5
Lay the piadina flat and top with some radicchio, then top with roasted figs and crumbled Gorgonzola. Combine the honey and chilli flakes in a small saucepan until runny, then drizzle on top
