Recipe Tip: Almond Granita
Top Recipe for 4 Persons. All ingredients and tips for getting it right. Ice meets rich almond purée – mixed together and scraped up into icy flakes, it makes an almond granita!
- 110 gorganic almond purée, (available online)
- 500 mlwater
Step 1Mix everything together and season to taste (it tastes less sweet frozen!).
Step 2Pour into a suitable metal or enamel mould and freeze.
Step 3After 1 hour, remove from the freezer and roughly mix with a fork. Freeze for a further 2 hours, then scrape through vigorously with the tines of a fork to get icy flakes.
Step 4Cover with foil and freeze until required. Up to this point, the recipe can be prepared up to 3 days in advance
Step 5Before serving, scrape again vigorously to obtain even crystals and pour into chilled glasses.
