Ultimate BLT sandwich
The BLT is a classic sandwich with its combination of salty bacon, crisp lettuce and juicy tomatoes. We love to add some extra juicy and sweet confit tomatoes to our version, along with a herby mayonnaise.

Ingredients
- smoked streaky bacon, 8 rashers
- 2slices of farmhouse-style white bread
- 1handful of iceberg lettuce, very finely sliced
- 8confit cherry tomatoes
- 2egg yolks
- 100ml of vegetable oil
- 50ml of Carapelli Extra Virgin Olive Oil
- ½tsp Dijon mustard
- 1garlic clove, grated to a paste
- 1dash of malt vinegar
- 1dash of Tabasco
- 1tbsp of fresh chives, very finely chopped
- 1tbsp of fresh parsley, very finely chopped
Instructions
Step 1
To make the mayonnaise, place the egg yolks and mustard into the bowl of an electric mixer. Slowly begin adding the flavourless oil drip by drip. Then, in a thin stream, slowly add the olive oil in the same way. Add the malt vinegar, Tabasco and garlic and whisk to combine. Season with salt and stir through the chopped herbsStep 2
Place the bacon into a cold pan and place over medium-low heat. As the bacon begins to sizzle, place something heavy on top of the bacon, such as another pan. Cook slowly, turning occasionally, until the bacon is lovely and crisp (cooking it slowly helps all the fat to render properly)Step 3
To assemble the sandwich, spread a generous layer of mayonnaise on both pieces of the breadStep 4
Top with a layer of shredded iceberg lettuce, then the confit tomatoes and the bacon. Close the sandwich and slice in half to serve
