Recipe Tip: Bucatini all'Amatriciana

Ingredients
- 400 gBucatini (or thick spaghetti)
- 1 tablespoonextra virgin olive oil
- 1 glass(es)dry white wine
- 75 gPecorino cheese
- 100 gGuanciale (pork cheek or bacon)
- 350 gstrained tomatoes
- black pepper
- 1chilli pepper, seeds removed, sliced
Instructions
Step 1
Remove the rind and dice the bacon. Then fry it in a pan with the oil and the chilli pepper. Deglaze with the white wine and reduce.Step 2
Remove the bacon from the pan and set aside. Add the strained tomatoes to the rendered fat of the bacon and bring to the boil.Step 3
In the meantime cook the pasta in salted water. When the pasta is cooked to al dente, drain it well and add it to the sauce in the pan. Add the bacon cubes to the pasta, season with pepper and mix well.Step 4
Divide the pasta between the plates and sprinkle with the grated pecorino to serve.Step 5
