Marinated in yogurt, ginger, garlic and spices, these juicy chicken skewers make a great starter for an Indian-inspired feast or a delicious lunch, wrapped in flatbreads
- Serves: 4 persons
- 3large chicken breasts, cut into chunky pieces
- 75g greek yogurt
- 2tbsp ginger and garlic paste
- 1tbsp madras curry powder
- 1tsp ground cumin
- 1tsp ground turmeric
- 1tsp smoked paprika
- 2tsp mild chilli powder
- 1tbsp lemon juice
Step 1Tip all of the ingredients into a large bowl with plenty of seasoning and mix really well. Cover and chill for at least a few hours but preferably overnight.
Step 2Heat the grill to high. Thread the chicken pieces onto four metal skewers, leaving any excess marinade behind, packing in the pieces so they are all touching. Put onto a baking tray and cook under the grill for 4-5 minutes or until charred, then flip and repeat until cooked through and charred all over.
Step 3Serve with flatbreads, raita, shredded lettuce and some pink pickled onions, if you like.
