Fresh tomato and fregola salad
We’re not sure if this fresh tomato and fregola salad actually qualifies as a ‘salad’ but it’s certainly full of bright flavours with its fresh tomato sauce, Parmesan and abundance of basil.

Ingredients
- 250g of fregola
- 25g of Parmesan, shaved
- 1handful of basil leaves, torn
- extra virgin olive oil, to serve
- 6tomatoes
- 2garlic cloves
- 3tbsp of olive oil
- 1bunch of basil, leaves torn
- 1tsp cane sugar
- salt
- freshly ground black pepper
Instructions
Step 1
Cook the fregola in boiling salted water until al denteStep 2
Combine all the sauce ingredients in a small blender and whizz to a sauce consistency, seasoning well with salt and pepperStep 3
Serve the fregola on top of the sauce, with shavings of Parmesan, basil leaves and extra virgin olive oil to garnish
