Recipe Tip: Scandinavian Potato Salad

- 500 gsmall waxy potatoes, scrubbed
- 1 headbatavia lettuce (or similar leafy lettuce), washed and spun dry
- radishes, very thinly sliced
- 1spring onion, sliced
- 50 gcapers, rinsed and drained
- 75 mlolive oil
- 1 handfulparsley leaves, chopped
- 1garlic clove, grated
- 1 tablespoonsoya sauce
- tablespoonlemon juice
- pinch(es)freshly ground pepper
Step 1Put the potatoes in a large pan of salted water and cook for 10 minutes or untl tender when tested with the tip of a sharp knife.
Step 2For the dressing, combine all the ingredients in a bowl and mix well.
Step 3Drain the potatoes, leave to cool slightly and slice while still warm, retaining the skins.
Step 4Meanwhile, arrange the lettuce on a large serving plate.
Step 5Combine the potato slices with about three quarters of the dressing in a warmed bowl and arrange on top of the salad leaves.
Step 6Sprinkle the radishes, spring onions and capers over the salad.
Step 7Finally, drizzle over the remaining dressing and finish with a grinding of black pepper.
