Recipe Tip: Scandinavian Potato Salad

Ingredients
- 500 gsmall waxy potatoes, scrubbed
- 1 headbatavia lettuce (or similar leafy lettuce), washed and spun dry
- radishes, very thinly sliced
- 1spring onion, sliced
- 50 gcapers, rinsed and drained
- 75 mlolive oil
- 1 handfulparsley leaves, chopped
- 1garlic clove, grated
- 1 tablespoonsoya sauce
- tablespoonlemon juice
- pinch(es)freshly ground pepper
Instructions
Step 1
Put the potatoes in a large pan of salted water and cook for 10 minutes or untl tender when tested with the tip of a sharp knife.Step 2
For the dressing, combine all the ingredients in a bowl and mix well.Step 3
Drain the potatoes, leave to cool slightly and slice while still warm, retaining the skins.Step 4
Meanwhile, arrange the lettuce on a large serving plate.Step 5
Combine the potato slices with about three quarters of the dressing in a warmed bowl and arrange on top of the salad leaves.Step 6
Sprinkle the radishes, spring onions and capers over the salad.Step 7
Finally, drizzle over the remaining dressing and finish with a grinding of black pepper.Step 8
