Make the most of the short elderflower season by making this fresh cordial – serve it with sparkling water, mix with gin over ice or toss with fruit for a salad

- 80g elderflowers
- 375g granulated sugar
- 4strips of lemon peel, plus 25ml lemon juice
- 4g citric acid
Step 1Remove any bugs or other impurities from the elderflowers by hand. Set aside.
Step 2Pour 750ml of boiling water from the kettle over the sugar in a large, deep saucepan, then stir to dissolve. Cool slightly before adding the elderflower, lemon peel and juice, and the citric acid. Stir gently, then cover with the lid and leave to infuse for at least 12 hrs, or up to 24 hrs.
Step 3Line a fine mesh sieve with muslin cloth and sit it over a large bowl. Pour over the cordial mixture, discarding any solids. Pour the cordial into a 1.5-litre sterilised bottle using a funnel. Keeps chilled for up to four weeks.
