Mango salad with citrus fruits and almonds

Ingredients
- 40g flaked almonds
- 2blood oranges
- 1orange
- 1grapefruit
- 2mandarins or clementines
- 2mangoes, ripe
- juice of 1 lime
- a few mint leaves for garnish (optional)
Instructions
Step 1
Toast the flaked almonds in an oven preheated to 170 °C until golden brown. Then leave to cool.Step 2
Remove the peel and white part from the citrus fruit. Cut between the segments over a bowl to drop the pieces into the bowl, collecting the juice. Peel and dice the mangoes.Step 3
Puree half the mango with the lime juice and about 240 milliliters of the collected citrus juice in a blender until smooth.Step 4
Carefully mix the citrus segments with the remaining mango cubes.Step 5
