Recipe Tip: Cream of Rose Petal Soup

Ingredients
- 1small onion finely chopped
- 20 gbutter
- 4 tablespoonspelt flour
- 500 mlvegetable stock
- 250 gwhipped cream
- 1 handfuledible rose petals
- 1 teaspoon(s)salt
- 1 teaspoon(s)mild curry powder
- 1 teaspoon(s)honey
- 1 teaspoon(s)chilli powder (to taste)
- 1 tablespoonrose liqueur
- edible rose petals as garnish
Instructions
Step 1
Sauté finely chopped onion in butter until translucent, then sprinkle with flour and stir over a gentle heat.Step 2
When the flour turns light yellow, gradually pour in vegetable stock, stirring continuously.Step 3
Once thickened, add whipped cream, rose petals, spices and honey and simmer very briefly.Step 4
Blend, then season with chilli and rose liqueur.Step 5
Decorate with finely chopped red rose petals and serve hot.
