- 400 gpumpkin
- 150 gspring onions
- 50 gshallots
- 20 mlsesame oil
- 20 mlolive oil
- 10 gcurry powder
- cumin
- saffron
- salt
- black pepper, freshly ground
- cayenne pepper
- 50 gfresh ginger
- 3lemon leaves
- 250 mlcoconut milk
- 100 gchickpeas, pre-soaked (or half a tin)
Instructions
Step 1
Cut the pumpkin flesh into small pieces.Step 2
Wash and clean the spring onions and slice into fine rings, chop the shallots.Step 3
Sauté the pumpkin, spring onions and shallots briefly in olive and sesame oil and deglaze with coconut milk.Step 4
