Recipe Tip: Pumpkin Curry

- 400 gpumpkin
- 150 gspring onions
- 50 gshallots
- 20 mlsesame oil
- 20 mlolive oil
- 10 gcurry powder
- black pepper, freshly ground
- cayenne pepper
- 50 gfresh ginger
- 3lemon leaves
- 250 mlcoconut milk
- 100 gchickpeas, pre-soaked (or half a tin)
Step 1Cut the pumpkin flesh into small pieces.
Step 2Wash and clean the spring onions and slice into fine rings, chop the shallots.
Step 3Sauté the pumpkin, spring onions and shallots briefly in olive and sesame oil and deglaze with coconut milk.
Step 4Season with curry powder, cayenne pepper, salt and the lemon leaves and simmer for 10 minutes. Cook the chickpeas in salted water until soft and stir in.
