Effortless madeleine 'baba'
This is a cheat on a rum baba that’s very simple – use your favourite rum to make it more special

Ingredients
- 100g caster sugar
- 125ml golden or dark rum
- 2-4 madeleines
- scoop of crème fraîche or whipped cream to serve
Instructions
Step 1
Put 75ml of water and the caster sugar into a small pan, and bring to a simmer, swirling the pan at the start to help the sugar dissolve.Step 2
Bring to a boil and bubble for 5 mins to make the syrup a little thicker, then add the rum off the heat. Chill the syrup.Step 3
Arrange the madeleines in small bowls or glasses and, when you are ready to serve, pour over a good dose of the syrup, leaving to soak for a minute or two.Step 4
Serve each with a scoop of crème fraîche or whipped cream.
