- 70 gwild garlic leaves, de-stemmed
- 70 gflat parsley leaves
- 60 gpine nuts, roasted
- salt
- 30 gPecorino, freshly grated
- 100 gParmesan cheese, freshly grated
- 1 lolive oil
Instructions
Step 1
Wash the wild garlic and parsley leaves, dab dry and chop coarsely. Finely grind the pine nuts and salt in a mortar, then add the herbs and work everything into a fine paste. Stir in the Pecorino and Parmesan and add the oil.Step 2
Mix everything well and fill the pesto into a dark container.Step 3
