Monte Cristo
This ham and cheese toastie named after the famous French novel is finished with honey, for a sweet and savoury twist.

Ingredients
- 4slices of white bread
- 2tbsp of mayonnaise
- 2tspDijon mustard
- 2slices ofYorkshire ham
- 100g ofGruyere, grated
- 3eggs
- saltto season
- 1knob ofbutter
- honey, to serve
Instructions
Step 1
Lightly beat the eggs with a pinch of salt and set asideStep 2
Spread two slices of the bread with mayonnaise, and two with Dijon mustard. Divide the ham and cheese between the sandwiches and close them, pressing gentlyStep 3
Melt the butter in a frying panStep 4
Dip each sandwich into the beaten egg, then add to the frying pan (one at a time, unless your frying pan is large enough to accommodate both) and cook for a minute or two, until crisp and goldenStep 5
Turn the sandwich(es) over using a spatula, and cook until golden on the other sideStep 6
Once cooked, transfer the sandwiches to a plate and drizzle with a little honey to serve
