      Cut the passion fruit lengthwise. Mix half of the pulp with some finely grated fresh turmeric and strain through a sieve to remove the seeds.

      Season with a dash of fish sauce and whip with the olive oil to a creamy emulsion. Carefully open the oysters, drain the water.
    3. Step 3

      Place on a serving plate with crushed ice, drizzle a little of the emulsion on each oyster and garnish with a slice of chilli and some chives.

      Put the other passion fruit half in the middle of the oysters, cut lime into eight pieces, arrange them on the plate and enjoy immediately!
