Recipe Tip: Oysters with Fresh Passion Fruit and Chilli - Falstaff

- 12Gillardeau oysters No.3
- 1ripe passion fruit
- 1fresh turmeric rhizome
- 1 dash(es)fish sauce
- 3 tablespoonolive oil
- 1Thai chilli, red
- 8 stem(s)chives
- 1lime
- crushed ice
Instructions
Step 1
Cut the passion fruit lengthwise. Mix half of the pulp with some finely grated fresh turmeric and strain through a sieve to remove the seeds.Step 2
Season with a dash of fish sauce and whip with the olive oil to a creamy emulsion. Carefully open the oysters, drain the water.Step 3
Place on a serving plate with crushed ice, drizzle a little of the emulsion on each oyster and garnish with a slice of chilli and some chives.Step 4
Put the other passion fruit half in the middle of the oysters, cut lime into eight pieces, arrange them on the plate and enjoy immediately!
