Cowboy Beans with Fried Eggs Recipe
'Cowboy beans' are a spicier, richer version of baked beans, made with a little bit of chocolate and coffee for some extra depth of flavour. We've topped ours with a beautiful fried Freshlay Farms Golden Yolker®, for an extra-indulgent topping.
Ingredients
- 3ancho chillies, or other mild Mexican smoky chilli
- ½pint of coffee
- 1 ½tbsp of cumin seeds
- 1tbsp of coriander seeds
- 8 ¾oz of pancetta, or smoked bacon lardons
- 2onions, diced
- 2red peppers, diced
- 1Scotch bonnet chilli, left whole but pierced
- 1bulb of garlic, cloves peeled and crushed
- 1tbsp of Worcestershire sauce
- ½pint of beef stock, good quality
- 1 ¾lb of tinned plum tomatoes
- 1cinnamon stick
- 2bay leaves
- 2 ¼lb of tinned black beans, drained weight
- 2tbsp of red wine vinegar
- 1 ¾oz of 70% dark chocolate
- 3Freshlay Farms Golden Yolker® eggs
- vegetable oil, for cooking
- pickled jalapeños
- sour cream
- tortilla chips
Instructions
Step 1
Submerge the dried chillies in the hot brewed coffee | Ingredients: 3 ancho chillies, or other mild Mexican smoky chilli , 1/2 pint of coffeeStep 2
Toast the cumin and coriander seeds in a dry pan over a medium heat for a minute or so until they start to smell aromatic then grind to a powder | Ingredients: 1 1/2 tbsp of cumin seeds , 1 tbsp of coriander seedsStep 3
Heat a couple of tablespoons of oil, then add the pancetta and cook until the fat has rendered. Remove the cooked pancetta from the pan. Add in the onions and cook until soft, scraping up all the bits from the bottom of the pan. Remove the chillies from the coffee and slice them, discarding their stalks and seeds. Add them to the pan along with the Scotch bonnet, garlic, dried chillies, cumin, coriander, Worcestershire sauce and coffee | Ingredients: 1 Scotch bonnet chilli, left whole but pierced , 1 bulb of garlic, cloves peeled and crushed , 1 tbsp of Worcestershire sauceStep 5
Return the meat to the pan together with the stock, tinned tomatoes, cinnamon stick and bay leaves and mix | Ingredients: 1/2 pint of beef stock, good quality , 1 3/4 lb of tinned plum tomatoes , 1 cinnamon stick , 2 bay leavesStep 6
Bring to a boil then reduce to a simmer. Cook for 30 minutes, or until everything is thick and rich. Check the seasoning and add salt and pepper as necessaryStep 7
After this time, remove the lid and add the beans. Cook for a further 30 minutes then remove from the heat before adding the vinegar and chocolate | Ingredients: 2 1/4 lb of tinned black beans, drained weight , 2 tbsp of red wine vinegar , 1 3/4 oz of 70% dark chocolateStep 8
