Cajun salmon fillets with mango salsa
Juicy mango and crispy fish are a mixture straight from paradise. Spiced like this, the first bite transports us straight to the Caribbean beach.
- Serves: 4 persons
Ingredients
- 4salmon fillets (160-180 g each)
- 1EL olive oil
- 80g butter
- lime wedges to serve
- 1TL sea salt, fine
- ½TL black pepper
- 1EL paprika, smoked
- 1TL oregano, dried
- 1TL garlic powder
- 1TL onion powder
- ½TL cayenne pepper
- 2mangoes, ripe, diced
- 1small red onion, nicely chopped
- 1Bund coriander, roughly chopped
- juice of 1 lime
- ½red bell pepper, finely diced
- 1TL chilli flakes
- 2EL fish sauce
- salt
- pepper
Instructions
Step 1
Mix all the ingredients for the seasoning mix. Coat the salmon fillets evenly with oil and rub all over with the spice mixture. Set aside and prepare the salsa.Step 2
For the salsa, mix the mango cubes, red onion, coriander, lime juice, red bell pepper and chilli flakes in a bowl. Season to taste with salt and pepper and set aside.Step 3
In a cast iron pan, heat the butter and a tablespoon of olive oil over a medium-high heat. Fry the salmon fillets for 3 to 4 minutes on each side until they have a nice crust.Step 4
Serve the salmon fillets immediately garnished with the mango salsa and with lime wedges to drizzle over the top.
