Cajun salmon fillets with mango salsa

Juicy mango and crispy fish are a mixture straight from paradise. Spiced like this, the first bite transports us straight to the Caribbean beach.

  1. Step 1

    Mix all the ingredients for the seasoning mix. Coat the salmon fillets evenly with oil and rub all over with the spice mixture. Set aside and prepare the salsa.
  2. Step 2

    For the salsa, mix the mango cubes, red onion, coriander, lime juice, red bell pepper and chilli flakes in a bowl. Season to taste with salt and pepper and set aside.
  3. Step 3

    In a cast iron pan, heat the butter and a tablespoon of olive oil over a medium-high heat. Fry the salmon fillets for 3 to 4 minutes on each side until they have a nice crust.
  4. Step 4

    Serve the salmon fillets immediately garnished with the mango salsa and with lime wedges to drizzle over the top.
