Cottage cheese pancakes
Using a blender to make these pancakes means breakfast is on the table in minutes. Top with your favourite chopped fruits and a drizzle of maple syrup

Ingredients
- 150g rolled oats
- 100g cottage cheese
- 2eggs
- ½tsp vanilla extract
- 50ml milk
- 1tbsp unsalted butter
- maple syrup , to serve
- fresh berries , to serve
Instructions
Step 1
Put the oats, cottage cheese, eggs and vanilla into a blender, and pulse until smooth. Add in the milk and blitz again.Step 2
Heat a non-stick frying pan over a medium heat and rub some of the butter over the pan. Spacing them evenly apart, dollop in dessertspoons of the batter and cook for 2-3 mins on each side until golden brown. Lay them in a folded over tea towel to keep warm while you repeat with the remaining butter and batter.Step 3
Serve in a stack, drizzle with maple syrup and scatter over the berries to serve.
