Chicken souvlaki
Cook some sizzling chicken souvlaki skewers on the barbecue or grill. We've made this classic Greek fast food dish lighter by using chicken breast rather than thighs

Ingredients
- 2skinless chicken breast fillets, cut into chunks
- 1clove garlic, crushed
- 1lemon, 1/2 juiced and zested, 1/2 cut into wedges
- 1tsp dried oregano
- 2tsp olive oil
- 1green pepper, cut into chunks
- 1small red onion, cut into wedges
- 2flatbreads, griddled
- salad leaves, to serve
Instructions
Step 1
Put the chicken, garlic, lemon juice and zest, oregano and olive oil into a bowl. Season well then toss together and leave for 30 minutes.Step 2
Thread the chicken onto skewers with pieces of pepper and onion in between. Griddle or grill until golden and cooked through.Step 3
Serve on a flatbread with some salad and a couple of lemon wedges for squeezing.
