Cook some sizzling chicken souvlaki skewers on the barbecue or grill. We've made this classic Greek fast food dish lighter by using chicken breast rather than thighs
- Serves: 2 persons
- 2skinless chicken breast fillets, cut into chunks
- 1clove garlic, crushed
- 1lemon, 1/2 juiced and zested, 1/2 cut into wedges
- 1tsp dried oregano
- 2tsp olive oil
- 1green pepper, cut into chunks
- 1small red onion, cut into wedges
- 2flatbreads, griddled
- salad leaves, to serve
Step 1Put the chicken, garlic, lemon juice and zest, oregano and olive oil into a bowl. Season well then toss together and leave for 30 minutes.
Step 2Thread the chicken onto skewers with pieces of pepper and onion in between. Griddle or grill until golden and cooked through.
Step 3Serve on a flatbread with some salad and a couple of lemon wedges for squeezing.
