Apple strudel
This Austrian dish sees a mixture of soft apple and raisin, spiced with cinnamon, wrapped up in thin sheets of filo and baked until crisp. A comforting classic

Ingredients
- 750g cooking apples
- 75g raisins
- 100g caster sugar
- 1tsp ground cinnamon
- ½lemon, zested and juiced
- 6sheets filo pastry
- 100g unsalted butter, melted
- 1tbsp icing sugar
- whipped cream, to serve
Instructions
Step 1
Heat the oven to 190C/170C fan/gas 5. Mix together the apples, raisins, sugar, cinnamon and lemon zest and juice in a bowl with a small pinch of salt.Step 2
Lay a clean tea towel on your worksurface and then lay a sheet of filo on top and brush really well with melted butter. Put another sheet directly on top of this and brush again. Repeat with the remaining sheets and butter.Step 3
With the longest side of the filo facing you, spoon on the apple filling in a thick log, leaving a 4cm border nearest you, and also at the sides. Fold in the sides, then use the towel to help you roll the whole thing up into a fat log. Brush with a little more melted butter and put into the oven for 30-35 mins or until golden and crisp.Step 4
Leave to cool until just warm, then dust with icing sugar and serve with some lightly whipped cream.
