    1. Step 1

      Separate the egg yolks and whites. Mix the flour, beer, yolks, lemon zest and salt until smooth and leave to rest for 20 minutes, covered.

      Mix in the cinnamon and sugar. Beat the egg whites until stiff and carefully fold into the batter.
    3. Step 3

      Peel and core the apples, then cut into slices about the thickness of a finger. Dip in the batter and fry in the hot lard. Only place as many apple slices in the hot fat as can comfortably fit next to each other in the pan.

      Lift the apple pieces out of the pan, drain briefly on kitchen paper, sprinkle with cinnamon-sugar mixture and serve while still warm.
