Peach and lime leaf lassi
This peach and lime leaf lassi is super simple to put together. Making the lime leaf syrup separately allows you to adjust the level of sweetness depending on your tastes and the ripeness of your peaches.

Ingredients
- 100g of caster sugar
- 100g of water
- 12lime leaves, torn
- 300g oftinned peaches
- 300g ofnatural yoghurt
- 100g of buttermilk
- saltto season
- lime juiceto taste
- shelled pistachiosto taste, chopped
Instructions
Step 1
Combine the caster sugar, water and lime leaves in a saucepan and bring to a boil, then turn off the heat and allow to cool to room temperatureStep 2
Puree the peaches, yoghurt, buttermilk, salt and lime juice in a blender, then stir in lime leaf syrup to taste - start with 1 tbsp and work upStep 3
Pour into a glass and top with chopped pistachios to serve
