Heirloom tomato salad
This simple tomato salad recipe from Esra Muslu with crunchy almonds and green yoghurt uses extremely sweet and savoury heirloom tomatoes and is the perfect addition to any summer meal.

Ingredients
- 45g offresh mint
- 100g ofcucumber, roughly chopped
- 1garlic clove, roughly hcopped
- 3g ofMaldon salt
- 60g offull fat yoghurt
- 170g ofheirloom tomato
- 15g of extra virgin olive oil
- ½lemon, juiced
- 1g of sumac
- 1g ofMaldon salt
- 1handful offlaked almonds, toasted
- 5g ofmicro watercress leaves
Instructions
Step 1
Blend all the ingredients for the green yogurt with one spoonful of the plain yogurtStep 2
Once it is bright green and well blended, transfer out of the blender into a bowl. Stir in the rest of the yogurtStep 3
Thickly slice the tomatoes and mix with the oil, lemon juice, sumac and saltStep 4
Spread two spoonfuls of the green yogurt on the bottom of a plateStep 5
Place the tomato mixture in the middle of the plateStep 6
Sprinkle almonds around the edge of the tomatoes and top them with the watercress
