Banana fritters
Serve these battered, deep-fried bananas with a dusting of icing sugar – look for yellow-skinned bananas (not green), as you'll want them to be ripe

Ingredients
- 100g self-raising flour
- 1tsp bicarbonate of soda
- ½tsp vanilla bean paste
- 1egg
- 150ml whole milk
- 5ripe bananas, peeled
- flavourless oil, for deep-frying
- a dusting icing sugar, to serve
Instructions
Step 1
In a large bowl, whisk together the self-raising flour, bicarbonate of soda, vanilla bean paste and a pinch of salt. Crack in the egg and pour in the whole milk. Whisk to a smooth, thick batter. Cut the bananas into four diagonal pieces each.Step 2
Fill a pan no more than a third full with flavourless oil and heat to 180C, or until a cube of bread browns in 30 seconds. Dip each of the banana pieces into the batter, making sure they’re fully covered, then carefully lower into the oil. Fry, in batches, for 2 minutes until deeply golden. Drain on kitchen paper and dust with icing sugar to serve.
