Recipe Tip: Spring Onions with Salvitxada

Ingredients
- 8large spring onions, the largest you can find
- 100 gunsalted roasted almonds
- 100 mlolive oil
- 3ripe tomatoes
- 4garlic cloves
- 2 teaspoon(s)smoked paprika powder Pimentón de la Vera
- 1 slice(s)stale white bread, soaked in a little white wine vinegar
- pinch(es)salt
- 1 bunch(es)parsley, coarsely chopped
Instructions
Step 1
In the original version, the onions are grilled on an open fire. However, they can also be charred under the oven grill.Step 2
Preheat the grill to maximum. First grill the tomatoes and the unpeeled garlic for about 20 minutes until the skin is cracked and charred.Step 3
Leave to cool, then peel. Coarsely chop the almonds in a blender.Step 4
Add the paprika, garlic, tomatoes, bread soaked in vinegar, coarsely chopped parsley and olive oil and blend until medium fine in texture.Step 5
Season with salt. Place the spring onions under the grill and roast until the outer layer of skin is completely charred.Step 6
Turn them over and over again. After about 30 minutes, take them out, spread them out and let the next batch of onions char in the same way.Step 7
If you want, you can peel off the burnt skin before serving, but real aficionados prefer to do it themselves – it tastes better somehow.Step 8
To serve lay the spring onions flat on a plate and top with the salsa.
