Recipe Tip: Asian Fish Balls

Ingredients
- 250 gfish scraps, such as salmon or trout, (check for bones, scales then shredded)
- 250 gmashed potatoes (from the day before)
- 2spring onions, finely chopped
- ½ bunch(es)coriander, finely chopped
- 1egg
- 1chilli, finely chopped
- salt
- pepper
- breadcrumbs or panko flour (Asian breadcrumbs)
- oil for deep frying
- 1organic lemon
- soy sauce
- lightly toasted sesame seeds
Instructions
Step 1
For the fish balls, mix all the ingredients (fish scraps, potato, spring onions, coriander, egg and chilli) together and season the mixture with salt, pepper and chilli (according to taste).Step 2
Form small balls and cover them in the breadcrumbs or the panko flour. Fry immediately in oil.Step 3
Add the roasted sesame seeds to the soy sauce and serve with fish balls adding a lemon wedge.Step 4
