Recipe Tip: Christmas Superfood Balls

Ingredients
- 100 gcoconut oil, melted
- 70 gcocoa butter, melted
- 100 gcocoa powder
- 60 gdates, pitted
- 20 ghoney
- 1vanilla pod, inside only
- 1 pinch(es)Maldon sea salt
- Dusting ingredients (eg matcha powder, cacao powder, coconut blossom sugar)
- edible flowers (eg rose petals, marigolds)
- various nuts (eg almonds, hazelnuts, walnuts), chopped
- superfoods (eg cocoa nibs, goji berries, hemp seeds)
- dried fruits (eg raisins, cranberries)
Instructions
Step 1
In a blender, place melted coconut oil, melted cacao butter, cacao powder, pitted dates, honey, the inside of the vanilla bean and a pinch of Maldon salt.Step 2
Blend all ingredients at maximum speed until smooth. Chill the mixture for 4 hours.Step 3
Using a spoon to portion out, form small balls out of the solid mixture by hand.Step 4
Coat the still-wet balls with ingredients of your choice such as matcha powder, rose petals etc.Step 5
Chill the energy balls before serving. They can be stored in the refrigerator for up to several weeks.
