Hot smoked salmon, gnocchi and spinach bake
Ready-made gnocchi and frozen spinach are an easy base for this creamy, satisfying dish. Prep the day before and all you’ll have to do is slide this into the oven when you're ready to eat

Ingredients
- 500g gnocchi
- 4lightly hot-smoked salmon fillets (skins removed)
- 200ml double cream
- 150ml whole milk
- 1lemon
- 4thyme sprigs, leaves picked
- 3tbsp grated parmesan
- 2tbsp wholegrain mustard
- 4-6 pellets of frozen spinach
- salad, to serve
Instructions
Step 1
Put the gnocchi into a baking dish and nestle the salmon fillets in between – everything should fit fairly snugly.Step 2
Mix together the cream, milk, lemon zest, thyme leaves, parmesan and mustard, and season well.Step 3
Add the frozen spinach to the baking dish and pour over the cream. Cover and chill for up to 12 hrs.Step 4
Heat the oven to 220C/200C fan/ gas 7 and bake for 20-25 mins, giving it a gentle mix halfway to break up the spinach, until the gnocchi is tender and the salmon is cooked through. Serve with a salad.
