Recipe Tip: Tomato and Burrata Salad - Falstaff

- 2large ox heart tomatoes (800g), cored
- 2 tablespoonquality olive oil
- 2balls of burrata
- 4 tablespoonbasil pesto
- 1unwaxed lemon, zested on a fine grater
- 1 handfulbasil leaves
- pinch(es)black pepper
Step 1Cut the tomatoes into thin slices (a serrated knife is best).
Step 2Arrange on four serving plates, season with salt and drizzle with a little olive oil.
Step 3Tear the burrata and arrange on top of the tomatoes.
Step 4Drizzle the pesto over the top. Sprinkle over the lemon zest, season with pepper and garnish with the basil leaves to serve.
