Chocolate chunk cookies with pecans
Chunky, nutty and oh-so-moreish, these dark chocolate pecan cookies are the perfect after dinner treat or edible gift. Make them in just 20 minutes
- Serves: 12 persons
- 200g dark chocolate, broken into chunks
- 100g butter, chopped
- 50g light muscovado sugar
- 85g golden caster sugar
- 1tsp vanilla extract
- 1egg, beaten
- 100g pecans
- 100g plain flour
- 1tsp bicarbonate of soda
Step 1Melt 85g of the chocolate, then beat in the butter, sugars, vanilla and egg until smooth. Stir in most of the remaining chocolate and nuts, then the flour and bicarbonate of soda.
Step 2Heap 12 spoonfuls, spaced apart, on baking sheets, then poke in the last nuts and chocolate chunks. Bake for 12 mins at 180C/fan 160C/gas 4 until firm.
