Recipe Tip: Avocado with Raclette - Falstaff

- 1 handfuldiced bacon lardons, fried until crisp (optional), to serve
Step 1Preheat the oven to 220°C.
Step 2Halve and stone the avocado and remove some of the flesh from the inside with a spoon.
Step 3Place the avocado halves in a baking dish and crack an egg into each hole. Season with salt and pepper and top each avocado half with a slice of raclette.
Step 4Bake in the oven for 15 minutes until the cheese is melted and the eggs are cooked.
Step 5Sprinkle over the fried bacon lardons, if using, to serve.
