Add fresh strawberries to a classic lime-and-rum combo for a summery take on a Mojito. Best served in the sunshine, with plenty of fresh mint
- Serves: 1 person
- 2-3 tsp caster sugar, plus 1 tbsp
- 1lime, cut into wedges, plus an extra wedge for the sugar rim
- 8-10 fresh mint leaves, plus a sprig to garnish
- small handful of chopped ripe strawberries, plus a whole strawberry to garnish
- 50ml white rum
- soda water
Step 1Put 1 tbsp sugar on a small plate and spread evenly. Run a lime wedge around the rim of a large tumbler or highball glass and dip the rim into the sugar until crusted.
Step 2Put the lime wedges, mint and remaining sugar into a highball glass and muddle together using the end of a rolling pin. Add the strawberries and gently muddle again to release the juices.
Step 3Pour over the rum and gently stir. Add ice, top up with soda water and garnish with a mint sprig and whole strawberry.
