Recipe Tip: Spelt & Wild Garlic Bread

Ingredients
- 500 gspelt
- 1sachet dried yeast
- 450 mlwater
- 50 gsunflower seeds
- 50 glinseeds
- 50 gpumpkin seeds
- 1 handfulwild garlic
- 1 tablespoonturmeric
- 1 teaspoon(s)salt
- 1 teaspoon(s)fennel seeds
- 1 teaspoon(s)cumin
- 1 teaspoon(s)coriander seeds
Instructions
Step 1
Preheat the oven to 200°C.Step 2
Put the spelt, salt, fennel, cumin and coriander in a grain mill and grind finely.Step 3
Pour 450ml of warm water in a bowl, add the dry yeast and turmeric powder and mix well.Step 4
Chop the wild garlic and add to the bowl with the spelt and spice flour, sunflower seeds, linseed and pumpkin seeds, and knead everything together thoroughly.Step 5
Shape and place the dough in a loaf tin, sprinkle with seeds and bake for 60 minutes at 200°C. Leave to cool for 10 minutes before removing from tin.Step 6
