Recipe Tip: Spelt & Wild Garlic Bread

- 500 gspelt
- 1sachet dried yeast
- 450 mlwater
- 50 gsunflower seeds
- 50 glinseeds
- 50 gpumpkin seeds
- 1 handfulwild garlic
- 1 tablespoonturmeric
- 1 teaspoon(s)salt
- 1 teaspoon(s)fennel seeds
- 1 teaspoon(s)cumin
- 1 teaspoon(s)coriander seeds
Step 1Preheat the oven to 200°C.
Step 2Put the spelt, salt, fennel, cumin and coriander in a grain mill and grind finely.
Step 3Pour 450ml of warm water in a bowl, add the dry yeast and turmeric powder and mix well.
Step 4Chop the wild garlic and add to the bowl with the spelt and spice flour, sunflower seeds, linseed and pumpkin seeds, and knead everything together thoroughly.
Step 5Shape and place the dough in a loaf tin, sprinkle with seeds and bake for 60 minutes at 200°C. Leave to cool for 10 minutes before removing from tin.
