Recipe Tip: Cauliflower & Broccoli Salad
Top Recipe for 2 Persons. All ingredients and tips for getting it right. A crunchy vegetable salad refined with nuts and cranberries.
Ingredients
- ½head of cauliflower
- ½head of broccoli
- 1red onion
- 30 gdried cranberries or sultanas
- 3 tablespooncashew nuts
- 150 mlyoghurt dressing (e.g. Mautner Markhof)
- salt
- pepper
- pear slices to garnish
Instructions
Step 1
Rinse the broccoli and cauliflower, divide both into florets and steam for 10 minutes.Step 2
Meanwhile, peel and dice the red onion.Step 3
Put the steamed broccoli, cauliflower, onion, cranberries and cashew nuts in a large bowl (setting aside a few nuts and cranberries for garnishing).Step 4
Add the dressing and mix well. Season with salt and pepper if needed.Step 5
To serve, garnish with the remaining cashew nuts, cranberries or sultanas and pear slices.
