Recipe Tip: Chicken tacos

Ingredients
- 4chicken breasts, cut into long strips
- 1 teaspoon(s)Chipotle chilli powder
- 1 teaspoon(s)smoked paprika
- 1 teaspoon(s)cumin powder
- salt & pepper
- 6medium tomatoes, diced
- ½red onion, diced
- 1red chilli, chopped
- handfulfresh coriander
- salt & pepper
- 2ripe avocados
- 1 clove(s)garlic, crushed
- ½lime, juiced
- 1medium tomato, diced
- soft tacos
- handfulcoriander, chopped
- 3gem lettuces, shredded
- 300 mlsour cream
- 2limes, cut into eighths
- grated cheese
Instructions
Step 1
In a bowl combine the chicken with the paprika, cumin and chilli powder, salt and pepper and leave to marinade.Step 2
Assemble all the serving ingredients.Step 3
For the salsa, combine all the ingredients and season to taste. Add more chilli if you prefer more of a kick.Step 4
For the guacamole, chop the avocado into small pieces with the back of a fork, mash it but not until smooth. Add the garlic, lime juice, chopped tomatoes and combine. Season to taste.Step 5
For the chicken, in a large frying pan or shallow saucepan, add a tablespoon of olive oil and once heated, add the chicken. Cook for 15 mins, or until the chicken is cooked through.Step 6
Serve immediately.
