Uncooked Lemon Slice
Enjoy the fresh lemon flavour of this easy to make slice.

Ingredients
- 200g sweetened condensed milk
- 125g Tararua Butter
- 250g packet plain biscuits
- 1cup desiccated coconut
- Juice and zest from 1 lemon
- Lemon Icing
- 1cup Chelsea Icing Sugar
- 1tsp lemon juice
- Hot water
- Desiccated coconut to sprinkle on top

Step 1
Grease and line a 20cm baking tin.Step 2
Melt Tararua Butter and condensed milk together. Crush biscuits and add to butter mixture together with the coconut, lemon juice and lemon zest. Press into tin, then refrigerate for 1 hour.Step 3
Mix together Chelsea Icing Sugar, lemon juice and enough hot water to form a smooth spreadable consistency. Spread over the slice and sprinkle with coconut. Leave to set.Step 4
Alternatively, just dust with Chelsea Icing Sugar.
