Pomegranate molasses is pomegranate juice that's been reduced to concentrate its flavour and create a kind of syrup. Here, it's matched with tequila, triple sec and fresh lime to make a refreshingly sweet-sour cocktail
- Serves: 4 persons
- 4tbsp pomegranate molasses
- 2tsp sea salt flakes
- 1tsp caster sugar
- 200ml tequila
- 100ml triple sec
- 75ml lime juice (about 2 limes)
- 2tbsp sugar syrup
Step 1Put 1 tbsp of the molasses onto a shallow plate and tilt to cover the base of the plate. Combine the salt and sugar, and tip this onto another shallow plate. Dip the rims of four tumbler glasses in the pomegranate molasses, then the salt and sugar mixture to coat. Set aside.
Step 2Pour the tequila, triple sec, lime juice, sugar syrup and remaining molasses into a cocktail shaker with a handful of ice and shake until the outside of the shaker feels really cold.
Step 3Fill the prepared tumblers with ice cubes, then pour in the cocktail.
