Recipe Tip: Celeriac Soup with Tonka Bean

Ingredients
- 1 tablespoonvegetable oil
- 400 gceleriac, trimmed and chopped
- 1onion, chopped
- 1 tablespoonapple cider vinegar
- 800 mlvegetable stock
- 2 tablespoonground almonds
- pinch(es)salt
- pinch(es)multicoloured pepper
- 1 pinch(es)freshly grated tonka bean
Instructions
Step 1
Heat the vegetable oil in a large saucepan. When hot, add the onion and cook, stirring, until translucent – the onion should not take on any colour.Step 2
Add the celeric, stir briefly, then add the vegetable stock and vinegar. Simmer for about 15 minutes or until the celeriac is tender.Step 3
Add the ground almonds and use a handheld stick blender to blend to a smooth purée.Step 4
Taste and season with a pinch of freshly ground tonka bean, salt and pepper.Step 5
