Recipe Tip: Celeriac Soup with Tonka Bean

This recipe is refined with tonka bean, a South American spice with an alluring scent that complements the celeriac perfectly.
- 1 tablespoonvegetable oil
- 400 gceleriac, trimmed and chopped
- 1onion, chopped
- 1 tablespoonapple cider vinegar
- 800 mlvegetable stock
- 2 tablespoonground almonds
- pinch(es)multicoloured pepper
- 1 pinch(es)freshly grated tonka bean
Step 1Heat the vegetable oil in a large saucepan. When hot, add the onion and cook, stirring, until translucent – the onion should not take on any colour.
Step 2Add the celeric, stir briefly, then add the vegetable stock and vinegar. Simmer for about 15 minutes or until the celeriac is tender.
Step 3Add the ground almonds and use a handheld stick blender to blend to a smooth purée.
Step 4Taste and season with a pinch of freshly ground tonka bean, salt and pepper.
