Almond Granita
Ice meets rich almond purée – mixed together and scraped up into icy flakes, it makes an almond granita!
- Serves: 4 persons
Ingredients
- 110g organic almond purée, (available online)
- 2-3 EL sugar
- 500ml water
Instructions
Step 1
Mix everything together and season to taste (it tastes less sweet frozen!).Step 2
Pour into a suitable metal or enamel mould and freeze.Step 3
After 1 hour, remove from the freezer and roughly mix with a fork. Freeze for a further 2 hours, then scrape through vigorously with the tines of a fork to get icy flakes.Step 4
Cover with foil and freeze until required. Up to this point, the recipe can be prepared up to 3 days in advanceStep 5
Before serving, scrape again vigorously to obtain even crystals and pour into chilled glasses.
