Green tomato spicy marg
Make your green tomato consommé ahead of time to streamline the prep this for this tart and piquant cocktail from Saltine restaurant in London

Ingredients
- 50ml tequila (such as El Rayo)
- 30ml green tomato consommé , defrosted (see below)
- 15ml lime juice
- 10ml agave syrup
- 5large green tomatoes , roughly chopped (you can usually find these online)
- 100g ginger , peeled and roughly chopped
- 3jalapeños , roughly chopped (add more to increase the spice level), plus a sliver to garnish
- 1tsp coriander seeds , crushed
- large pinch of crushed black pepper
- bunch of coriander , chopped
- 1tsp salt
Instructions
Step 1
Tip all the ingredients for the consommé into a blender and pulse into a purée. Strain through a fine sieve or muslin cloth – you could use a coffee filter if you want extra clarity. Keep chilled or freeze in 30ml portions.Step 2
To serve, chill a glass. Pour the cocktail ingredients into a shaker with ice, shake well and strain into the glass. Garnish with a sliver of jalapeño to serve.
