Mezcal and elderflower highball
Mix up this fragrant mezcal highball, topped with grapefruit soda and rose water and garnished with edible flowers for a floral finish

Ingredients
- 100ml mezcal
- 30ml elderflower cordial
- 400ml grapefruit soda
- ½tsp rose water
- edible flowers or rose bud, to serve (optional)
Instructions
Step 1
Add ice to two highball glasses and pour in the mezcal and elderflower. Stir well, add more ice to fill up the glasses and then top up with grapefruit soda.Step 2
If you have a mini bottle with a pump, fill with rose water and spray the surface of the drink. Alternatively, add ¼ tsp of rose water to the surface of each drink and stir gently. Garnish with an edible flower, if you like, and serve. (Joia uses a rose bud to garnish this drink – it should be removed before drinking.)
