Recipe Tip: Coconut and Lime Soup
Top Recipe for 4 Persons. All ingredients and tips for getting it right. This soup can be enriched with chicken, fish or seafood of your choice.
- 1 bunch(es)coriander
- 1 Stückorganic lime
- 1red chilli
- 1 stalk(s)lemon glass
- 2 cube(s)vegetable stock
- 400 mlcoconut milk
- 3 cmfresh ginger
- pepper mix
- soy sauce
Step 1Wash and finely chop coriander.
Step 2Scrub the lime, grate zest and squeeze it.
Step 3Wash chilli, cut in half lengthwise and remove the seeds completely, if the soup should not end up too spicy. Finely chop chilli.
Step 4Peel lemongrass stalk and finely chop the remaining tender core.
Step 5Dissolve the stock cubes in 400ml of boiling water and bring to a boil. Add coconut milk. Add the coriander, lime juice and grated lime, chilli, chopped lemongrass stalk and the grated ginger and bring the soup to the boil again briefly.
Step 6Garnish with the pepper mix and season with a little soy sauce.
Step 7Add bean sprouts just before serving.
Step 8Cook rice noodles or soba noodles (buckwheat noodles) separately.
Step 9If you are feeling very hungry: marinate some organic chicken breast strips in lime juice (30 minutes in the fridge), then cook in the stock for 15 minutes (before adding the coconut milk).
