    Preparation:

    Heat the vegetable oil in a large saucepan. When hot, add the onion and cook, stirring, until translucent – the onion should not take on any colour.

    Add the celeric, stir briefly, then add the vegetable stock and vinegar. Simmer for about 15 minutes or until the celeriac is tender.
  4. Step 4

    Add the ground almonds and use a handheld stick blender to blend to a smooth purée.
  5. Step 5

    Taste and season with a pinch of freshly ground tonka bean, salt and pepper.
