Ingredients
- 400g celeriac, trimmed and chopped
- 1onion, chopped
- 1EL vegetable oil
- 1EL apple cider vinegar
- 800ml vegetable stock
- 1Prisen freshly grated tonka bean
- 2EL ground almonds
- Prisen salt
- Prisen multicoloured pepper

Heat the vegetable oil in a large saucepan. When hot, add the onion and cook, stirring, until translucent – the onion should not take on any colour.Step 3
Add the celeric, stir briefly, then add the vegetable stock and vinegar. Simmer for about 15 minutes or until the celeriac is tender.Step 4
Add the ground almonds and use a handheld stick blender to blend to a smooth purée.Step 5
Taste and season with a pinch of freshly ground tonka bean, salt and pepper.
