This vibrant, fresh green sauce is made with anchovies, capers, lemon and fresh herbs and pairs perfectly with grilled fish, chicken or vegetables.
- Serves: 6 persons
- 1clove garlic
- fillets 4 anchovy
- 1shallot, finely chopped
- 1lemon, zested and juiced
- 2tbsp capers, chopped if large
- a bunch parsley
- a bunch basil
- olive oil
Step 1Crush the garlic in a pestle and mortar, add the anchovy and crush again to a rough paste, then add the shallot and lemon zest and give it a good mix to release the flavours.
Step 2Stir in the capers and herbs and lemon juice, bruising the herbs a little.
Step 3Season and add enough olive oil to get the consistency you want.
